Vegan pavlova

Today in Norway it's the national day ❤ At home we have the tradition of making pavlovas on this day. Pavlova is a meringue and then cream and then fruits. On the national day we like to have berries on it to get the colors of the flag. But today I made it in a vegan version and also a lighter version. Less fat and less sugar and completely plant based. And believe me if you can, that was delicious 😋 So to make the vegan meringue you need to use aquafaba. Aquafaba is the cooking water that comes out of beans and peas. In this case I took a can of chickpeas and used the aquafaba of the box. ( I used the chickpeas to make vegan chicken but that is another story 😉) So what do you do with the aquafaba ? You whisk it until you get your meringue. Like with white of your eggs ? Yes, exactly like it. Vegan omelette test number 2.0 Way better !

If you remember the time I tried to make omelette with chickpea flour... that was a no go 😅 So I decided to try another sort of vegan omelette with a tofu basis this time. That was MUCH better !! Here is the recipe from  The minimalist baker if you want to try it 😃 The taste was really ok this time. Arepas, Pupusas are deliciousas !

A Venezuelan friend came to my house one evening and showed me how to make Arepas. Arepas is corn bread that you fry and then fill with what you want to fill with. Black beans and cheese. Meat with tomato sauce... On this day we used vegan chicken with tomato sauce and vegan cheddar. That was really delicious !❤ The recipe is really simple. You use this corn flour : And you mix with water. The consistence is right when you can make a ball in your hand and there is no cracks. Then you form small balls that you flatten with the palm of your hand before frying it in the pan. It's ready when the color is right ( see the picture ) After that it's just to enjoy. You can eat the Arepas as they are ( I did... a lot ! because it's so good ) or you open them with a knife and fill them with what you want to. No need to say you... I went crazy about these things. Vegan omelette ? No thank you...

Tonight I tried to make vegan omelette… lol. I tried a recipe made with chickpea flour. There is a ton of those recipes on the internet. I won't put you the link because... it's not worth it.  Really. Don't make a vegan omelette with chickpea flour. Just don't. That doesn't taste like omelette AT ALL. That is not really good either. Not really bad I have to say. Eatable. But nothing to do with omelette. Those who pretend that have stopped eating eggs for way too long to remember how it tastes. This thing tastes like a bad chickpea cake. Not really bad. I ate it. I did. But I won't do it again. Nope ! No thanks ! It wasn't really pretty either. Oh yeah... I could work on it and make it look like the real deal. But I don't see the point. I am not interested in making something beautiful if the taste is not following. So there. I tried it for you. You don't need to try it yourself 😂 I spared you that at least.

Sticky Sesame Cauliflower

Tonight I tried the  Sticky Sesame Cauliflower from Connaisseurus veg That was a really good dinner that me and the girls really enjoyed. Very comforting and satisfying food. And normally I'm not a big fan of cauliflower... I did put less sugar in the sauce though because the quantity in this recipe was just enormous. It was more than enough with half of the sugar that you normally put.  The batter that you make in the beginning was also too much. Make half of it, then you don't waste so much ingredients. And put a little more flour than indicated then you can correctly coat your cauliflower with the batter. Enjoy !

Egyptian bread

Here is how to make wonderful Egyptian bread ❤ Ingredients : 350 gr water 1 packet yeast 450 gr flour 50 gr whole rye flour 10 gr salt Mix all the ingredients well and knead. Let the dough rise in a warm place for an hour. Knead again and form small balls. Cover them and let them rise for another 20 mn. Spread them out with a rolling pin to get a nice flat circle. Use more rye flour if they are sticky. And then watch the video to see how you bake the bread ( you'll need a pastry circle and a grid ) Enjoy !
