Santa Lucia day and the famous "lussekatter"

Today in Norway in the Santa Lucia day. We celebrate the kind and sweet Saint Lucy " who according to legend brought food and aid to Christians hiding in the catacombs using a candle-lit wreath to light her way and leave her hands free to carry as much food as possible" ( quoting Wikipedia ) We celebrate also the winter solstice and the light finally coming back ( slowly ) in our lives !  There is a traditional pastry we make at this occasion in Norway : Lussekatter ! This is a spiced yeast-leavened sweet bun that is flavoured with saffron ( to remind you of the light 😎) I love it ! Today I veganized the recipe and it was just as good as the normal one. Seitan, fantastic meat replacement

Hi there ! what do you think is in the pan ? This is seitan ( + some onion, carrots and mushrooms ) Seitan is a meat replacement. I do it myself and if you wish you can ask me to try it for free and order from me later if you like it. Seitan can be made in different ways. This one was a "beefy" one. Doesn't it look good in the pan ? I promise you it tastes even better than it looks. Then I added corn and tomato sauce and got a perfect sauce to my pasta. Easy, beautiful and healthy dinner there you go ! And delicious. And environment friendly. Is there something else we can ask for ? Bon appétit !
