Santa Lucia day and the famous "lussekatter"


Today in Norway in the Santa Lucia day. We celebrate the kind and sweet Saint Lucy "who according to legend brought food and aid to Christians hiding in the catacombs using a candle-lit wreath to light her way and leave her hands free to carry as much food as possible" ( quoting Wikipedia )

We celebrate also the winter solstice and the light finally coming back ( slowly ) in our lives ! 
There is a traditional pastry we make at this occasion in Norway : Lussekatter !

This is a spiced yeast-leavened sweet bun that is flavoured with saffron ( to remind you of the light 😎)

I love it !

Today I veganized the recipe and it was just as good as the normal one.
