Lazy evening dinner : pita pizza !

On evening when you want to make an easy dinner and need some comfort food... your solution is pita pizza ! Take some frozen pita, put some tomato sauce on it, some grated cheese and what you want on top ( here I put seitan - meat replacement - and mushrooms ). Put in oven for 10/15 mn at 200 ° C, voilà ! You have your dinner ! Add some salad on the side and you even have a balanced dinner 😉 Bon appétit !

Father's day cake ❤ In Norway today it's father's day. Here is the cake I made for the occasion. This is a big chocolate cake ( 40 servings ) made for our church. You can see the silhouette of a father walking with his daughter. He is showing her the way through life.  If you pay attention there is a ray of light that goes to the sky on the picture. This is the link between the father of the girl and our Father in heaven. This cake symbolize love, guidance and protection. Happy father's day to all the fathers out there ❤ and our Father in Heaven, please take care of the fathers who already left us #jepenseàtoipapa.

Vegetarian version of Norwegian "skumkake" ( foamcake )

One of the most delicious Norwegian cake I know ❤ This is normally made with gelatin but as I am a vegetarian I had to try another way to do it and guess what... that works just fine with agar agar, so this is what I did ! I also reduced by half the normal amount of sugar because well... there is more than enough 😋 So here is my recipe : Ingredients  4 egg whites 2 dl sugar 1 tsp vanilla extract 4 tsp agar agar 1 dl water 150 gr chocolate chips 30 gr butter *Whip the egg whites with the sugar and vanilla until you get a firm and shiny mixture *boil the agar agar with the water and then let it cool until mild *add slowly the liguid to your meringue while you whip it with an electric mixer. *continue to whip for 5 mn *Put your mixture in a form and let it cool in the fridge for 1 hour *melt the chocolate with the butter and cover your foamy cake with it *let the cake cool in the fridge for another 30 mn  Tadaaaaaaaaaa ! Veggie Pho soup

Pho soup is a traditional Vietnamese soup with beef and noodles. Here  is my vegan version of it ❤ I replaced the beef with wood ear fungus mushroom and that was simply delicious. Made the broth with ginger, soya sauce, star anise, onions, vegetable broth and chili. Cooked the mushrooms in broth, cooked the rice noodles apart and add grated carrots, spring onions and fresh coriander. The taste was amazing and all family enjoyed the dinner even it was vegan and gluten free… would you believe it ? 💚 Bon appétit ! *note : if you want this dinner to be gluten free you have to use gluten free soya sauce 😉

My version of Poke bowl

Poke bowl makes a delicious lunch 💓 I put sushi rice in a bowl then add avocado, mango, grated carrots, wakame algae and prawns ( or replace the prawns with edamame beans if you want a vegan version 😉 ). I eat it with some soya sauce and this is truly fresh and delightful and a perfect balanced meal at the same time. Try it at home and let me know ! ( Kids usually enjoy it )
