Veggie Pho soup



Pho soup is a traditional Vietnamese soup with beef and noodles. Here  is my vegan version of it ❤
I replaced the beef with wood ear fungus mushroom and that was simply delicious.


Made the broth with ginger, soya sauce, star anise, onions, vegetable broth and chili.
Cooked the mushrooms in broth, cooked the rice noodles apart and add grated carrots, spring onions and fresh coriander. The taste was amazing and all family enjoyed the dinner even it was vegan and gluten free… would you believe it ? 💚

*note : if you want this dinner to be gluten free you have to use gluten free soya sauce 😉
