Paella vegetariana



Today I made a fantastic paella ❤

This version of mine is not just vegetarian, it's vegan and it was de-li-cious !!!

I made my own veggeroni and it was a perfect chorizo for this paella ( find the recipe here )

Otherwise I made this paella with oignon, garlic, red bell pepper, mushrooms, edamame beans and green beans... roasted cashews and veggeroni on the top of it and that was to die for, seriously ❤

Everybody at home loved it. Even my 13 years old daughter who normally doesn't like anything with onions, mushrooms or slightly spicy. I guess the flavours were so nice that she forgot about the things she normally complains about. That was a big win !

And the thing I'm so proud about, I manage to make a beautiful soccarat on this paella. If you don't know what soccarat is check here. A good paella should have soccarat, every Spanish person know that, now you know it as well.

Will definitely make this again !
