Vegan cheesecake

Image
Today I'm proud to present you my new creation ❤ A vegan cheesecake. Loulou's vegan cheesecake. This is an original recipe and I won't share it with you ( sorry ! ) because I intend to sell that one 😉 What I can say to you is that it's made with oat and soy, that it is really delicious, very fresh and creamy and loaded with a lot of good fruits. And believe it or not there is not much sugar in this cake. For a big cake with 12 portions there is just 100 gr sugar. No gelatin, dairy free, reduced amount of sugar but still creamy and delicious 😋 My best advice, order one from me and see for yourself ! To order contact me on my facebook page  click here  or send me an email on yacoubhelene@msn.com !  ( nota, you have to live in Stavanger or region to order from me of course ! )

Now we all are very hot in the middle of this heat wave... What about a nice ice cream recipe ? Try it and let me know ❤ PS : the picture is not mine ( borrowed from  pixabay ) because when I make this ice cream I don't have time to take a picture, believe me 😂

Cauliflower wings

Image
Tonight I tried cauliflower wings ! That was a total success. Everybody liked it, even me and I'm normally not a big fan of cauliflower 😁 So here is how you do it : Cut one cauliflower into florets Prepare a dip with 2dl soymilk that you blend with 3ss flour and 2ss maizena. Then you add your spices. Pretty much what you want. I had "chicken spice mix", paprika, liquid smoke, pepper and tabasco. Then you dip your cauliflower in your mix and then roll it in breadcrumbs. After that it's just to roast it in the oven after you have sprinkled some oil on it. Roast 10 mn on one side and 10mn on the other. Booooom !!! You got yourself a nice dinner, healthier than kfc but if you trust me... much tastier !! And your kids will looooooove it, I promise ❤

Easy, kid friendly vegan fried noodles

Image
Last time I didn't have much time to make dinner. Here is what I came up with :) First I made a simple marinade with soy sauce, chili, garlic and ginger. I put some tofu in the marinade and let it for about 10 mn. In the mean time I cut some carrots, cucumber, mint, and cashews. It's what I had but would have worked with cilantro, squash and mushrooms lol. Do with what you have at home ( and what your kids are ok to eat 😁) Then I took the tofu out of the marinade and coated it with maizena. Next I fried the tofu. At that point I cooked water and cooked the noodles ( mine were ready after 3mn but check the package of yours to be sure ) After it was just to fry the noodles in the rest of the marinade plus sesame oil and at the end add the veggies, tofu and cashews. Really good, balanced, healthy, vegan, easy to do and kids friendly ! Enjoy !

Ginataang halo halo

Image
Yesterday I tried Ginataang halo halo, a Filipino dessert ❤ My friend Johane from the Philippines taught me the recipe, bless your heart Johane, this recipe is amazing, I loooooooooooooooooooooooooooove Ginataang, love it ! In this dessert you use sweet potatoes ( orange and purple ), plantain, rice balls and tapioca pearls. You can find purple sweet potato in Asian shops. It's delicious and gives the wonderful color to the dish 💜 To make the rice balls you use glutinous rice flour ( you find this in Asian shops as well ), mix it with some water and form balls with your fingers, that's it ! I love rice balls, I love the taste and the consistence of it. It's soft, elastic and sticky, for me it's the best ! So. To make this dessert. You cut your sweet potatoes and plantain. You cook it in water mixed with coconut milk until soft. Then you add some sugar ( follow your taste, my friend Johane had just a little dash of sugar ), the tapioca pearl and ri

Vegan pavlova

Image
Today in Norway it's the national day ❤ At home we have the tradition of making pavlovas on this day. Pavlova is a meringue and then cream and then fruits. On the national day we like to have berries on it to get the colors of the flag. But today I made it in a vegan version and also a lighter version. Less fat and less sugar and completely plant based. And believe me if you can, that was delicious 😋 So to make the vegan meringue you need to use aquafaba. Aquafaba is the cooking water that comes out of beans and peas. In this case I took a can of chickpeas and used the aquafaba of the box. ( I used the chickpeas to make vegan chicken but that is another story 😉) So what do you do with the aquafaba ? You whisk it until you get your meringue. Like with white of your eggs ? Yes, exactly like it. Here is the recipe : Aquafaba from 1 can of chickpeas ( don't throw the chickpeas, use it to make some hummus of curry of whatever ) 2 tbsp maizena 4

Vegan omelette test number 2.0 Way better !

Image
If you remember the time I tried to make omelette with chickpea flour... that was a no go 😅 So I decided to try another sort of vegan omelette with a tofu basis this time. That was MUCH better !! Here is the recipe from  The minimalist baker if you want to try it 😃 The taste was really ok this time. Still not like an omelette omelette but approaching enough to satisfy me :) The consistence was a little too wet thought so if I make this recipe again I might try with firm tofu that I press before and then run in the food processor instead of silken tofu which is way too wet for this recipe ( even firm silken tofu ) So here is the result, vegan omelette with homemade salsa and "pommes duchesses" ( French piped potato swirls ) It's normally made with butter and heavy cream but I found this vegan recipe that worked like a charm : Recipe from Patate et cornichon The recipe is in French but as it is a video I guess you might understand it even if you don
